Ingredients:

 

– **All-purpose flour**: 2 cups (240g)
– **Warm milk**: 1/3 cup (80ml)
– **Active dry yeast**: 2 1/4 teaspoons (1 packet)
– **Granulated sugar**: 2 tablespoons
– **Large eggs**: 2, room temperature
– **Unsalted butter**: 1/2 cup (115g), melted and cooled slightly
– **Vanilla extract**: 1 teaspoon
– **Salt**: 1/2 teaspoon
– **Pearl sugar**: 1 cup (180g)

Instructions:

 

1. **Prepare the Dough:**
– In a small bowl, dissolve the yeast in warm milk. Let it sit for about 5 minutes until it becomes frothy.
– In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and add the eggs, melted butter, vanilla extract, and the yeast mixture.
– Mix the ingredients together until a soft dough forms. You can use a stand mixer with a dough hook attachment or mix by hand.

2. **Knead the Dough:**
– Knead the dough for about 5-7 minutes until it becomes smooth and elastic.
– Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.

3. **Add Pearl Sugar:**
– Once the dough has risen, gently fold in the pearl sugar. Be careful not to overwork the dough, as you want the sugar to be evenly distributed without melting.

4. **Divide and Shape:**
– Preheat your waffle iron.
– Divide the dough into small portions, about 2-3 tablespoons each. Roll each portion into a ball.

5. **Cook the Waffles:**
– Place a dough ball in the center of the preheated waffle iron. Close the iron and cook until the waffle is golden brown and the sugar has caramelized, about 3-5 minutes.
– Carefully remove the waffle from the iron and let it cool slightly on a wire rack. Be cautious as the caramelized sugar will be extremely hot.

6. **Serve:**
– Serve the Liege waffles warm, plain or with toppings like fresh fruit, whipped cream, or a drizzle of chocolate.
