Ingredients:

  • 1 package refrigerated cookie dough (or homemade cookie dough)
  • 1/2 cup creamy peanut butter
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease a mini muffin tin or line it with paper liners.
  2. Form Cookie Cups:
    • Take a small amount of cookie dough and press it into each muffin cup, forming a small bowl shape with the dough. The dough should cover the bottom and sides to create a cup.
  3. Add Peanut Butter:
    • Place a teaspoon of creamy peanut butter into the center of each cookie dough cup.
  4. Bake:
    • Bake in the preheated oven for about 10-12 minutes or until the edges of the cookies are golden brown.
    • Remove from the oven and let them cool slightly. If the centers have puffed up, you can gently press them down with the back of a spoon.
  5. Prepare Chocolate Topping:
    • In a small saucepan, heat the heavy cream until it just begins to simmer.
    • Pour the hot cream over the chocolate chips and let sit for one minute, then stir until smooth and glossy.
  6. Top with Chocolate:
    • Spoon the melted chocolate over the peanut butter in each cookie cup.
  7. Chill:
    • Refrigerate the cookie cups for at least 30 minutes to set the chocolate.
  8. Serve:
    • Once set, remove the cookie cups from the muffin tin and serve. They can be stored in an airtight container for up to a week.
