- 1 package refrigerated cookie dough (or homemade cookie dough)
- 1/2 cup creamy peanut butter
- 1 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
Instructions:
- Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Grease a mini muffin tin or line it with paper liners.
- Form Cookie Cups:
- Take a small amount of cookie dough and press it into each muffin cup, forming a small bowl shape with the dough. The dough should cover the bottom and sides to create a cup.
- Add Peanut Butter:
- Place a teaspoon of creamy peanut butter into the center of each cookie dough cup.
- Bake:
- Bake in the preheated oven for about 10-12 minutes or until the edges of the cookies are golden brown.
- Remove from the oven and let them cool slightly. If the centers have puffed up, you can gently press them down with the back of a spoon.
- Prepare Chocolate Topping:
- In a small saucepan, heat the heavy cream until it just begins to simmer.
- Pour the hot cream over the chocolate chips and let sit for one minute, then stir until smooth and glossy.
- Top with Chocolate:
- Spoon the melted chocolate over the peanut butter in each cookie cup.
- Chill:
- Refrigerate the cookie cups for at least 30 minutes to set the chocolate.
- Serve:
- Once set, remove the cookie cups from the muffin tin and serve. They can be stored in an airtight container for up to a week.
