No-Bake Chocolate Oat and Nut Cups Recipe

**Base:**
– 1 cup rolled oats
– 1/2 cup almond or peanut butter
– 1/4 cup honey or maple syrup
– 1/4 cup chopped nuts (like almonds, walnuts, or pecans)
– 1/4 cup dried fruit (like cranberries or raisins)
– 1/2 teaspoon vanilla extract
– A pinch of salt

**Topping:**
– 1 cup dark chocolate chips or chopped dark chocolate
– 1 tablespoon coconut oil
– Pumpkin seeds and hemp seeds for garnish (optional)

**Instructions:**

 

1. **Prepare the Base:**
– In a large mixing bowl, combine the oats, almond or peanut butter, honey or maple syrup, chopped nuts, dried fruit, vanilla extract, and a pinch of salt. Stir until well combined.
– Line a muffin tin with paper liners or use a silicone muffin tray.
– Press the oat mixture into the bottom of each muffin cup, flattening it with the back of a spoon.

2. **Add the Chocolate Topping:**
– In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
– Pour the melted chocolate over the oat mixture in each muffin cup, spreading it evenly.

3. **Garnish:**
– Sprinkle the tops with pumpkin seeds, hemp seeds, or any other desired toppings.

4. **Chill and Serve:**
– Place the muffin tin in the refrigerator for at least 1 hour, or until the chocolate has fully set.
– Once set, remove the cups from the muffin tin and enjoy!

These treats are easy to customize with your favorite nuts, seeds, and dried fruits. They make for a great snack or dessert!
