Mini Apple Pies

Ingredients:

For the Dough:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup (1 stick) cold unsalted butter, cubed
  • 1/4 teaspoon salt
  • 3-4 tablespoons ice-cold water

For the Apple Filling:

  • 2 medium apples, peeled, cored, and diced
  • 2 tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

For Assembly:

  • 1 egg, beaten (for egg wash)
  • Powdered sugar, for dusting

Instructions:

  1. Prepare the Dough:
    • In a mixing bowl, combine the flour and salt.
    • Add the cold butter cubes and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs.
    • Gradually add ice water, one tablespoon at a time, until the dough just comes together.
    • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Apple Filling:
    • In a bowl, mix the diced apples with granulated sugar, brown sugar, cinnamon, lemon juice, and cornstarch. Toss to coat evenly.
  3. Assemble the Mini Pies:
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Roll out the dough on a floured surface to about 1/8-inch thickness.
    • Use a round cookie cutter (about 3-4 inches in diameter) to cut out circles from the dough.
    • Place a small spoonful of the apple filling in the center of each dough circle.
    • Fold the dough partially over the filling, leaving a portion of the apples exposed.
    • Place the assembled mini pies on the prepared baking sheet and brush the tops with the beaten egg.
  4. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the mini pies are golden brown.
  5. Serve:
    • Allow the pies to cool slightly, then dust with powdered sugar before serving.
