Mini Apple Pies

Ingredients:

- 1 1/2 cups all-purpose flour
- 1/2 cup (1 stick) cold unsalted butter, cubed
- 1/4 teaspoon salt
- 3-4 tablespoons ice-cold water
For the Apple Filling:
- 2 medium apples, peeled, cored, and diced
- 2 tablespoons granulated sugar
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
For Assembly:
- 1 egg, beaten (for egg wash)
- Powdered sugar, for dusting
Instructions:
- Prepare the Dough:
- In a mixing bowl, combine the flour and salt.
- Add the cold butter cubes and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until the dough just comes together.
- Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the Apple Filling:
- In a bowl, mix the diced apples with granulated sugar, brown sugar, cinnamon, lemon juice, and cornstarch. Toss to coat evenly.
- Assemble the Mini Pies:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the dough on a floured surface to about 1/8-inch thickness.
- Use a round cookie cutter (about 3-4 inches in diameter) to cut out circles from the dough.
- Place a small spoonful of the apple filling in the center of each dough circle.
- Fold the dough partially over the filling, leaving a portion of the apples exposed.
- Place the assembled mini pies on the prepared baking sheet and brush the tops with the beaten egg.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the mini pies are golden brown.
- Serve:
- Allow the pies to cool slightly, then dust with powdered sugar before serving.
