Meatloaf Stuffed with French Onion Soup – changing the way the world thinks about meatloaf!
Ingredients:
2 tablespoons butter
1 small yellow onion, diced

1 small green pepper, diced
8 ounces chopped brown mushrooms
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 pounds lean ground beef 80/20 or 85/15

2 tablespoons tomato sauce
2 tablespoons Worcestershire sauce
2 eggs
1 cup panko breadcrumbs
8 ounces sliced provolone cheese

Instructions:
Preheat the oven to 375 degrees and spray a large loaf pan with cooking spray . In a large skillet, add butter, onions, peppers, mushrooms, salt and pepper.
Allow to brown for 1-2 minutes before stirring, then allow to brown for another 1-2 minutes before stirring again.
In a large bowl, add ground beef, ketchup, Worcestershire sauce, eggs, panko breadcrumbs, and cooled vegetable mixture.Pour half of the mixture into your loaf pan, then place half of the cheese in a 2-inch section in the center of the pan (I cut the slices into thirds to get the right width).
Cover with the remaining meat and shape into a round loaf. Let it cook for 40 minutes, then remove from the oven, top with the remaining cheese and return. Cook for 15-20 minutes, then let rest for 10 minutes before slicing.
