**For the Matcha Mousse:**
– 2 tablespoons matcha green tea powder
– 2 tablespoons hot water
– 1 1/2 cups heavy whipping cream
– 1/4 cup sugar
– 1 teaspoon vanilla extract
– 1/4 cup white chocolate, melted (optional for extra sweetness)

**For Assembly:**
– Fresh raspberries (or strawberries, blueberries)
– Grated chocolate (dark or milk chocolate)
– Additional berries for garnish

Instructions:

 

1. **Prepare the Matcha:**
– In a small bowl, whisk together the matcha powder and hot water until the matcha is fully dissolved and smooth. Set aside.

2. **Make the Mousse:**
– In a large mixing bowl, add the heavy whipping cream, sugar, and vanilla extract.
– Whip the cream using an electric mixer on medium-high speed until it forms soft peaks.
– Gradually fold in the dissolved matcha mixture, ensuring it’s evenly incorporated.
– If using melted white chocolate, fold it into the whipped cream mixture at this point.
– Continue whipping until the mixture holds stiff peaks and is light and fluffy.

3. **Assemble the Parfaits:**
– In small glasses or dessert cups, spoon a layer of matcha mousse at the bottom.
– Add a layer of fresh raspberries over the mousse.
– Add another layer of matcha mousse to cover the berries.
– Repeat the layers if desired, ending with a final layer of matcha mousse.

4. **Garnish:**
– Sprinkle grated chocolate over the top of each parfait.
– Add a fresh raspberry or other berry on top as a garnish.

5. **Chill and Serve:**
– Refrigerate the parfaits for at least 1 hour to allow the mousse to set.
– Serve chilled and enjoy this refreshing and elegant dessert!
