Lemon Drizzle Cake Recipe
Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (225g) granulated sugar
- 4 eggs
- 1 1/2 cups (225g) all-purpose flour
- 2 tsp baking powder
- Zest of 2 lemons
- 1/4 cup (60ml) lemon juice

- 1/2 cup (115g) granulated sugar
- 1/3 cup (80ml) lemon juice
For the icing:
- 1 cup (115g) powdered sugar
- 2 tbsp lemon juice
Instructions:
- Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Grease and line a loaf pan with parchment paper.
- Mix Ingredients:
- In a mixing bowl, cream together the butter and sugar until pale and fluffy.
- Add eggs, one at a time, mixing well after each addition.
- Sift in the flour and baking powder, folding gently into the mix.
- Stir in the lemon zest and juice.
- Bake:
- Pour the batter into the prepared loaf pan.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare Syrup:
- While the cake is baking, heat the sugar and lemon juice for the syrup in a small saucepan until the sugar dissolves.
- Once the cake is done, while still warm, prick the top with a fork and drizzle the syrup over.
- Cool and Ice:
- Allow the cake to cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
- Mix the powdered sugar and lemon juice for the icing and drizzle over the cooled cake.
- Serve:
- Once the icing has set, the cake is ready to be served.
