Spinach and Cheese Pastry Pockets
Ingredients:
– 1 package (2 sheets) puff pastry, thawed
– 1 cup ricotta cheese
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
– 1 egg, beaten (for egg wash)
– 1/4 teaspoon ground nutmeg
– Salt and pepper to taste
Instructions:
1. **Preheat the Oven:**
– Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

– In a large bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, chopped spinach, ground nutmeg, salt, and pepper. Mix until well combined.
3. **Prepare the Puff Pastry:**
– Unfold the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares.
4. **Assemble the Pockets:**
– Place a generous spoonful of the spinach and cheese mixture in the center of each pastry square.
– Fold the pastry over the filling to form a triangle or rectangle, depending on your preference.
– Press the edges with a fork to seal, and place the pockets on the prepared baking sheet.
5. **Apply the Egg Wash:**
– Brush the tops of the pastry pockets with the beaten egg to give them a golden, shiny finish when baked.
6. **Bake:**
– Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed up.
