Ingredients:

  • 3 lbs potatoes, peeled and diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 3 tbsp butter
  • Salt and pepper, to taste
  • Chopped chives, for garnish

Instructions:

  1. Cook the Potatoes:
    • In a large pot, melt the butter over medium heat. Add the diced onions and garlic, sauté until translucent.
    • Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  2. Blend the Soup:
    • Using an immersion blender, puree the soup directly in the pot until smooth. Alternatively, you can blend the soup in batches using a blender. Be careful with the hot liquid.
  3. Add Creams:
    • Stir in the heavy cream and sour cream. Continue to heat the soup, but do not let it boil. Season with salt and pepper to taste.
  4. Prepare Garnishes:
    • Cook the bacon until crispy, then crumble it. Shred the cheddar cheese and chop the chives.
  5. Serve:
    • Ladle the soup into bowls. Top each bowl with shredded cheese, crumbled bacon, and a sprinkle of chives.
  6. Enjoy:
