Ingredients:

  • 2 lbs lamb or beef, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper, to taste
  • 2 large potatoes, peeled and cubed
  • 4 cups beef or lamb broth
  • 1 can (14.5 oz) diced tomatoes
  • Fresh cilantro or parsley, chopped for garnish
  • Flatbread or naan, for serving

  1. Brown the Meat:
    • Heat the oil in a large pot over medium-high heat. Add the lamb or beef chunks and brown on all sides. Remove the meat and set aside.
  2. Sauté Vegetables and Spices:
    • In the same pot, reduce heat to medium. Add the onion and garlic, sautéing until soft and translucent.
    • Stir in the cumin, coriander, turmeric, paprika, cayenne, salt, and pepper. Cook for another minute until fragrant.
  3. Cook the Stew:
    • Return the browned meat to the pot. Add the potatoes, broth, and diced tomatoes. Bring to a boil, then reduce the heat to low.
    • Simmer covered for about 1 to 1.5 hours, or until the meat is tender and the potatoes are cooked.
  4. Finish and Serve:
    • Adjust the seasoning if needed. Garnish with fresh cilantro or parsley.
    • Serve hot, accompanied by flatbread or naan to soak up the delicious sauce.
