Jam-Filled Butter Cookies

Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg yolk
- 2 cups (250g) all-purpose flour
- A pinch of salt
- Jam of your choice (strawberry, raspberry, or apricot work well)
- Powdered sugar, for dusting (optional)
Instructions:
- Prepare the Dough:
- In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Add the vanilla extract and egg yolk, mixing until fully incorporated.
- Gradually add the flour and salt, mixing just until the dough comes together. Avoid over-mixing.
- Shape the Cookies:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll the dough into small balls, about 1 inch in diameter, and place them on the baking sheet.
- Use the back of a fork or a cookie stamp to create a decorative pattern on each cookie.
- Make a small indentation in the center of each cookie using your thumb or a small tool.
- Fill with Jam:
- Add a small amount of jam into the indentation of each cookie. Be careful not to overfill, as the jam may spread during baking.
- Bake:
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Serve:
- Dust the cookies with powdered sugar if desired, and enjoy!
