Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 2 cups (250g) all-purpose flour
  • A pinch of salt
  • Jam of your choice (strawberry, raspberry, or apricot work well)
  • Powdered sugar, for dusting (optional)

Instructions:

  1. Prepare the Dough:
    • In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
    • Add the vanilla extract and egg yolk, mixing until fully incorporated.
    • Gradually add the flour and salt, mixing just until the dough comes together. Avoid over-mixing.
  2. Shape the Cookies:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • Roll the dough into small balls, about 1 inch in diameter, and place them on the baking sheet.
    • Use the back of a fork or a cookie stamp to create a decorative pattern on each cookie.
    • Make a small indentation in the center of each cookie using your thumb or a small tool.
  3. Fill with Jam:
    • Add a small amount of jam into the indentation of each cookie. Be careful not to overfill, as the jam may spread during baking.
  4. Bake:
    • Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  5. Serve:
    • Dust the cookies with powdered sugar if desired, and enjoy!
