Ingredients

  • 2 cups shredded cabbage
  • 2 large eggs
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella or cheese of choice
  • 1 tomato, sliced
  • Black sesame seeds or nigella seeds (optional, for garnish)
  • Fresh cilantro or parsley, for garnish
  • 1-2 tbsp olive oil or butter for cooking

Instructions

Step 1: Prepare the Cabbage Base

  1. Heat olive oil or butter in a non-stick skillet over medium heat.
  2. Add the shredded cabbage to the skillet, spreading it out evenly.

Step 2: Add the Egg Mixture

  1. In a small bowl, beat the eggs with a pinch of salt and pepper.
  2. Pour the beaten eggs over the cabbage, spreading them evenly so they cover the cabbage entirely.
  3. Cover the skillet and cook on low heat for about 5-7 minutes, until the egg is set and the cabbage is soft.

Step 3: Add Toppings

  1. Once the egg is mostly set, sprinkle shredded cheese over the top.
  2. Arrange tomato slices on top of the cheese.
  3. Sprinkle black sesame or nigella seeds over the tomatoes for a bit of texture and visual appeal.

Step 4: Melt the Cheese

  1. Cover the skillet again and cook on low heat until the cheese melts, about 3-4 minutes.
  2. Remove from heat and let it sit for a minute before transferring to a plate.

Step 5: Garnish and Serve

  1. Garnish with fresh cilantro or parsley leaves.
  2. Slice and serve warm, like a pizza.
