**Herb and Garlic Crusted Beef Tenderloin Recipe**

**Ingredients:**
– 1 whole beef tenderloin (about 4-5 pounds)
– 4 cloves garlic, minced
– 2 tablespoons fresh rosemary, chopped
– 2 tablespoons fresh thyme, chopped
– 2 tablespoons fresh parsley, chopped
– 2 tablespoons olive oil
– 1 tablespoon Dijon mustard
– Salt and freshly ground black pepper, to taste

**Instructions:**

1. **Preheat your oven:** Preheat your oven to 425°F (220°C).

2. **Prepare the beef tenderloin:** Trim any excess fat or silver skin from the beef tenderloin. Season the tenderloin generously with salt and pepper.

3. **Make the herb-garlic mixture:** In a small bowl, combine the minced garlic, rosemary, thyme, parsley, olive oil, and Dijon mustard. Mix until it forms a paste.

4. **Apply the herb-garlic mixture:** Rub the herb-garlic mixture all over the beef tenderloin, ensuring it is evenly coated.

5. **Roast the tenderloin:** Place the tenderloin on a roasting rack in a roasting pan. Roast the beef in the preheated oven for about 25-30 minutes, or until the internal temperature reaches 125°F (52°C) for medium-rare, or longer depending on your desired doneness.

6. **Rest the meat:** Once cooked, remove the tenderloin from the oven and let it rest for 10-15 minutes before slicing. This allows the juices to redistribute throughout the meat.

7. **Serve:** Slice the tenderloin into thick slices and serve with your favorite sides, like roasted vegetables or mashed potatoes.
