Hearty Vegetable Stew Recipe

Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 potatoes, diced
- 1 zucchini, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 can (14.5 ounces) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Sauté the Aromatics:
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.
- Add the Vegetables:
- Stir in the chopped carrots, celery, potatoes, and zucchini.
- Cook for another 5 minutes, allowing the vegetables to start softening.
- Add the Liquid and Seasonings:
- Pour in the vegetable broth and diced tomatoes (with their juices).
- Stir in the thyme, oregano, and bay leaf.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the vegetables are tender.
- Add the Green Beans:
- Add the green beans to the pot and continue simmering for an additional 10 minutes, or until the green beans are cooked through.
- Season and Serve:
- Remove the bay leaf.
- Taste the stew and season with salt and pepper as needed.
- Garnish with fresh parsley before serving.
