Ingredients:
- 1 lb Italian sausage (or meatballs), cooked
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 package (9 oz) refrigerated cheese tortellini
- 3 cups fresh spinach, roughly chopped
- Salt and pepper, to taste
- Parmesan cheese, grated (for serving)
Instructions:
- Cook the Meat:
- If using sausage, form it into small balls, or use pre-made meatballs. Brown them in a skillet with a little olive oil until cooked through. Set aside.
- Sauté the Vegetables:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent and the garlic is fragrant, about 5 minutes.
- Add Liquids and Simmer:
- Pour in the chicken broth and the can of diced tomatoes (with their juices). Bring the mixture to a boil, then reduce to a simmer.
- Add Tortellini and Meatballs:
- Add the cooked meatballs and refrigerated tortellini to the pot. Simmer for about 7-10 minutes, or until the tortellini is tender.
- Add Spinach:
- Stir in the chopped spinach and cook until the spinach is wilted, about 2 minutes. Season with salt and pepper to taste.
- Serve:
