Healthy Banana Brea
Easy bread filled with banana juice and a healthy serving of chopped nuts and a little cinnamon for protein, ready in ten minutes. 977 flour
Preheat oven to 350 degrees. Grease or spray a 9×5 loaf pan with nonstick cooking spray.
In a medium bowl, combine flour, baking powder, cinnamon and salt. Using a stand or hand mixer, beat the butter and sugar until light and fluffy. Turn the mixer to medium-low speed and add the eggs, one at a time, beating until combined. Add crushed banana and vanilla and whisk.
Turn mixer to low or blend and add dry ingredients, beating until combined. Don’t overdo it. Remove the mixture and stir in the flour until combined.
Bake for 55-60 minutes or until a toothpick inserted into the top comes out tender. Bake the bread in the pan for 5-10 minutes, then place the bread on a rack to cool. Cool before packaging.

Use very ripe bananas. Ripe bananas are naturally sweet and overcooked.
Walnuts can be used instead of walnuts.
Do not overbake the bread as this may cause the bread to become tough. When adding the flour mixture, the mixture should be on low setting and stir until just combined.
To change the taste, add 1 cup chocolate chips, 1/4 teaspoon peanuts, or 2/3 cup raisins.
Start checking the bread after 50 minutes. The bread is cooked when a toothpick inserted into the center comes out clean.
Freeze before packaging. Leave on the counter wrapped in plastic wrap or a resealable bag for 4 days.
