. In a large bowl, whisk the eggs, sugar, vanill

Heat the milk in a small saucepan to 180 degrees F or just before it begins to boil (do not boil).
Slowly pour the hot milk into the egg mixture and continue whisking until completely incorporated. Let the final mixture cook for another minute.
Pour mixture into prepared bowl and sprinkle with hazelnuts, if desired.
Fill a large cooking pot with water to a depth of approximately 2.5 cm.
Place two baking sheets in the oven and bake for 45-50 minutes or until a toothpick inserted comes out clean, the shielding will still jiggle. Be careful not to overdo it because you are the protector.
Serve hot or cold and garnish with cream, fruit or extra herbs. Store leftovers in the refrigerator.
