Grilled Pork Chops with Rice

 

 

**Ingredients:**

For the Pork Chops:

– 4 bone-in pork chops, about 1-inch thick
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon paprika
– 1 teaspoon dried thyme
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon ground mustard
– Juice of 1 lemon

For the Rice:

– 2 cups long-grain white rice
– 4 cups chicken broth (or water)
– 1 tablespoon butter
– Salt to taste

Garnish:

– Fresh herbs (such as thyme or parsley)

**Instructions:**

1. **Marinate the Pork Chops:**
– In a small bowl, mix the olive oil, minced garlic, paprika, thyme, salt, pepper, ground mustard, and lemon juice.
– Rub this mixture all over the pork chops. Cover and refrigerate for at least 30 minutes, or up to 4 hours for best results.

2. **Prepare the Rice:**
– In a medium saucepan, bring the chicken broth (or water) to a boil.
– Add the rice, butter, and a pinch of salt.
– Reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the liquid is absorbed.
– Fluff the rice with a fork and keep warm.

3. **Grill the Pork Chops:**
– Preheat your grill to medium-high heat.
– Remove the pork chops from the marinade and shake off any excess.
– Grill the pork chops for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C).
– Remove from the grill and let rest for a few minutes.

4. **Serve:**
– Arrange the rice on a serving platter or individual plates.
– Place the grilled pork chops on top of the rice.
– Garnish with fresh herbs.
