Grilled Chicken with Mango Avocado Salsa and Rice
Ingredients:
For the Chicken Marinade:
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp lime juice
- 2 garlic cloves, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh cilantro, chopped
For the Mango Avocado Salsa:

- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/2 red onion, finely chopped
- 1/2 red bell pepper, finely chopped
- 1 small cucumber, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced (optional, for heat)
- Juice of 1 lime
- Salt and pepper to taste
For Serving:
- 2 cups cooked white or brown rice
- Lime wedges (for garnish)
- Fresh cilantro (for garnish)
Instructions:
- Marinate the Chicken:
- In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, pepper, and chopped cilantro. Add the chicken breasts and toss to coat them evenly in the marinade.
- Cover and marinate the chicken for at least 30 minutes, or up to 2 hours in the refrigerator.
- Make the Mango Avocado Salsa:
- In a separate bowl, combine the diced mango, avocado, red onion, red bell pepper, cucumber, cilantro, and jalapeño (if using).
- Squeeze fresh lime juice over the salsa and season with salt and pepper. Gently toss everything together. Set aside.
- Grill the Chicken:
- Preheat your grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and grill for about 5–7 minutes on each side, or until fully cooked (internal temperature should reach 165°F / 75°C).
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- Assemble the Bowls:
- Divide the cooked rice into bowls.
- Slice the grilled chicken and arrange it on top of the rice.
- Spoon the mango avocado salsa over the chicken.
- Garnish with lime wedges and fresh cilantro.
