“Golden Crispy Chicken Patties”

 

 

Ingredients:

  • For the chicken cakes:
    • 2 cups cooked chicken, shredded
    • 1 cup breadcrumbs
    • 1/4 cup mayonnaise
    • 1/4 cup green onions, finely chopped
    • 1/4 cup fresh parsley, chopped
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • Salt and pepper to taste
    • 2 large eggs, beaten
    • Olive oil or butter for frying
  • For serving:
    • Lemon wedges
    • Fresh parsley, chopped
    • Tartar sauce or your choice of dipping sauce

Instructions:

  1. Prepare the chicken mixture:
    • In a large mixing bowl, combine the shredded chicken, breadcrumbs, mayonnaise, green onions, parsley, garlic powder, onion powder, salt, and pepper. Mix thoroughly.
    • Stir in the beaten eggs until the mixture is well combined.
  2. Form the cakes:
    • Scoop about a quarter cup of the mixture and form it into a small patty. Repeat with the remaining mixture.
  3. Cook the chicken cakes:
    • Heat a large skillet over medium heat and add enough olive oil or butter to coat the bottom.
    • Place the patties in the skillet, working in batches if necessary, and cook for about 3 to 4 minutes on each side or until golden brown and crispy.
  4. Serve:
    • Serve the chicken cakes hot, garnished with additional chopped parsley and lemon wedges on the side. Offer tartar sauce or your preferred dipping sauce for an extra touch.
