Golden Cheesy Potato Gratin
Ingredients:
- 2 pounds of potatoes, peeled and thinly sliced
- 1 cup of heavy cream
- 1 cup of milk
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of ground black pepper
- 1 cup of grated cheddar cheese
- 1/2 cup of grated Parmesan cheese
- Fresh chives, finely chopped (for garnish)
Instructions:
- Preheat Oven and Prep Potatoes:
- Preheat your oven to 375°F (190°C).
- Peel and thinly slice the potatoes. A mandoline works best for getting evenly thin slices.
- Layer the Potatoes:
- Lightly grease a baking dish with butter or cooking spray.
- Arrange the potato slices in an overlapping pattern in the dish, seasoning with salt and pepper between layers.
- Prepare Cream Mixture:
- In a saucepan over medium heat, combine the heavy cream, milk, and minced garlic. Bring to a simmer and then remove from heat.
- Pour and Top:
- Pour the cream mixture over the layered potatoes, ensuring it seeps into all the layers.
- Sprinkle the top with cheddar cheese and Parmesan cheese evenly.
- Bake:
- Cover the dish with aluminum foil and bake for about 45 minutes.
- Remove the foil and continue to bake for another 15-20 minutes or until the top is golden brown and bubbly.
- Garnish and Serve:
- Let the gratin sit for a few minutes after baking to set.
- Sprinkle chopped chives on top for garnish before serving.
