Ingredients:
For the Hummus:
- 1 can (15 ounces) chickpeas, drained and rinsed (reserve some liquid)
- 1/4 cup tahini

- 6-8 quail eggs, boiled and peeled
- 1 tablespoon olive oil (for drizzling)
- 1 teaspoon paprika or sumac (for sprinkling)
- Fresh parsley, chopped (for garnish)
- Pine nuts (optional, for garnish)
Instructions:
- Prepare the Hummus:
- In a food processor, combine the chickpeas, tahini, lemon juice, garlic, olive oil, ground cumin, and a pinch of salt.
- Process until smooth, adding small amounts of water or reserved chickpea liquid as needed to achieve a creamy consistency.
- Taste and adjust the seasoning with more lemon juice, salt, or cumin if desired.
- Boil the Quail Eggs:
- Bring a small pot of water to a boil.
- Carefully lower the quail eggs into the boiling water using a spoon.
- Boil for about 4 minutes for soft-boiled eggs or 5-6 minutes for hard-boiled eggs.
- Remove the eggs and place them in a bowl of cold water to stop the cooking process.
- Once cooled, peel the eggs carefully.
- Assemble the Dish:
- Spread the hummus on a serving plate, creating a well in the center for the toppings.
- Place the boiled quail eggs in the center of the hummus.
- Drizzle generously with olive oil.
- Sprinkle the top with paprika or sumac for color and flavor.
- Garnish with fresh parsley and pine nuts if desired.
