Delicious Vegetable Samosas Recipe
Recipe
Ingredients:
For the dough:
2 cups flour

1/2 teaspoon salt
1/4 cup vegetable oil
Water, required amount
For the filling:
2 medium potatoes, peeled and diced

1 cup peas
1 carrot, peeled and diced
1 tablespoon vegetable oil
1 teaspoon cumin
1 teaspoon minced ginger

1 teaspoon minced garlic
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
Salt to taste

2 tablespoons chopped fresh coriander
Oil for frying
Instructions:
To make the dough, mix all-purpose flour and salt in a large bowl. Gradually add the vegetable oil and stir until the mixture resembles coarse crumbs.
Slowly and gradually add water and knead until a soft dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.
Meanwhile, prepare the filling.Cook the diced potatoes, peas and carrots in a pot of water until tender. Drain and reserve.
In a large skillet, heat the vegetable oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
Add the chopped ginger and garlic and sauté until fragrant.Add the cooked vegetables along with coriander powder, turmeric powder, garam masala and salt. Let it boil for 2-3 minutes, then remove from the heat.
Add freshly chopped coriander to the vegetable mixture and mix well. Allow the filling to cool completely.

Divide the dough into equal-sized balls and roll each ball into a thin circle.Cut each circle in half to create semicircles.
Fold each semicircle in half to form a cone, then seal the edges with a little water.
Fill each cone with a tablespoon of the vegetable filling, then fold and seal the open edge to form a triangular samosa.
Heat the oil in a deep pan over medium heat. Once the oil is hot, fry the samosas in batches until they are golden brown and crispy on all sides.Remove samosas from oil and drain on paper towels.
Serve the vegetable samosas hot with your favorite chutney or sauce.
