Crispy Vegetable Fritters

 

 

Ingredients

 

– 1 cup all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon paprika
– 1/4 teaspoon cayenne pepper (optional, for heat)
– 1/2 cup milk
– 1 large egg
– 1 cup grated zucchini, squeezed to remove excess moisture
– 1/2 cup grated carrot
– 1/2 cup corn kernels (fresh, frozen, or canned)
– 1/2 cup diced bell pepper (red, green, or a mix)
– 1/4 cup chopped green onions
– Vegetable oil for frying

1. **Prepare the Batter:**
– In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
– In a separate bowl, beat the egg and then add the milk, mixing well.
– Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.

2. **Add the Vegetables:**
– Fold the grated zucchini, grated carrot, corn kernels, diced bell pepper, and chopped green onions into the batter. Mix until the vegetables are evenly distributed.

3. **Fry the Fritters:**
– Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
– Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon.
– Fry the fritters for about 2-3 minutes on each side, or until golden brown and cooked through.
– Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.

4. **Serve:**
– Serve the vegetable fritters warm with your favorite dipping sauce, such as sour cream, ranch dressing, or a spicy aioli.
