**Ingredients:**

– 2 large sweet potatoes, peeled and cut into thin fries
– 2 tablespoons olive oil
– 1 teaspoon cornstarch (optional, for extra crispiness)
– 1 teaspoon paprika
– 1/2 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon ground cumin
– Salt and pepper to taste
– Fresh herbs (like mint or parsley) for garnish

**Instructions:**
1. **Preheat the Oven:** Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

2. **Prepare the Sweet Potatoes:** Peel and cut the sweet potatoes into thin, even-sized fries. The thinner you cut them, the crispier they will get.

3. **Coat the Fries:** In a large bowl, toss the sweet potato fries with olive oil, cornstarch (if using), paprika, garlic powder, onion powder, cumin, salt, and pepper. Make sure each fry is evenly coated.

4. **Arrange on Baking Sheet:** Spread the fries out in a single layer on the prepared baking sheet. Make sure they are not touching each other to ensure they crisp up properly.

5. **Bake:** Bake in the preheated oven for 25-30 minutes, flipping the fries halfway through, until they are crispy and golden brown.

6. **Garnish and Serve:** Once done, garnish with fresh herbs like mint or parsley and serve immediately with the creamy avocado dip.
