Chocolate-Filled Bomboloni:
Ingredients:
- Dough:
- 500g (4 cups) all-purpose flour
- 10g (2 tsp) instant yeast
- 80g (1/3 cup + 1 tbsp) sugar
- 240ml (1 cup) warm milk
- 2 large eggs
- 60g (1/4 cup) unsalted butter, softened
- 1 tsp vanilla extract
- Pinch of salt
- Filling and Coating:
- Nutella or any chocolate hazelnut spread
- 200g (1 cup) granulated sugar
- 1 tbsp ground cinnamon (optional)
- Frying:
- Vegetable oil, for deep frying
Instructions:
- Prepare the Dough:
- In a large bowl, mix the flour, yeast, and sugar.
- Add the warm milk, eggs, vanilla extract, and a pinch of salt. Mix until combined.
- Incorporate the softened butter and knead until the dough is smooth and elastic, about 10 minutes.
- Cover the dough with a cloth and let it rise in a warm place until doubled in size, about 1 hour.
- Shape the Doughnuts:
- Roll out the dough on a lightly floured surface to about 1/2 inch thickness.
- Using a round cutter, cut out dough circles.
- Place the dough circles on a floured baking sheet, cover lightly with a cloth, and let them rise for another 30 minutes.
- Fry the Doughnuts:
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Fry the doughnuts in batches, turning once, until golden brown on both sides.
- Remove with a slotted spoon and drain on paper towels.
- Fill and Coat:
- Once cooled slightly, use a piping bag fitted with a narrow nozzle to inject chocolate spread into the center of each doughnut.
- Mix the granulated sugar with cinnamon if using, and roll the warm doughnuts in the sugar mixture to coat.
- Serve:
- These are best served warm for a gooey chocolate center.
