**Ingredients:**
– 4-6 medium-sized potatoes
– 3-4 tablespoons butter
– 3-4 cloves garlic, whole
– Salt and pepper to taste
– Fresh rosemary or thyme (optional)

1. **Prepare Potatoes:**
– Wash the potatoes thoroughly. If they are large, you can cut them in half. Leave the skin on for added texture and flavor.

2. **Boil Potatoes:**
– In a large pot, bring water to a boil and add the potatoes. Boil for about 10-15 minutes, or until they are just tender but not fully cooked. This helps to achieve a crispy exterior and fluffy interior when roasted.

3. **Preheat Oven:**
– Preheat your oven to 425°F (220°C).

4. **Sauté Potatoes:**
– In a large oven-safe skillet or cast-iron pan, melt the butter over medium heat. Add the whole garlic cloves and sauté for a couple of minutes until fragrant.
– Add the partially boiled potatoes to the skillet. Season with salt and pepper. Toss them gently to coat with the butter and garlic.

5. **Roast Potatoes:**
– Transfer the skillet to the preheated oven. Roast for about 20-25 minutes, turning the potatoes halfway through, until they are golden brown and crispy on the outside.

6. **Add Herbs:**
– In the last 5 minutes of roasting, add fresh rosemary or thyme to the skillet for additional flavor.

7. **Serve:**
– Remove the skillet from the oven and let the potatoes rest for a few minutes. Serve them hot with your favorite main dish, such as roast beef or chicken.
