For the Tomato Dipping Sauce:
– 1 can (14 oz) crushed tomatoes
– 1/2 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 2 cloves garlic, minced
– 1 tablespoon olive oil
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Instructions:
1. **Prepare the Potatoes:**
– Grate the potatoes and place them in a colander. Rinse under cold water to remove excess starch, then squeeze out any excess water using a clean kitchen towel or paper towel.
– Place the grated potatoes in a bowl and add the cornstarch. Season with salt and pepper to taste. Mix well until the potatoes are evenly coated with the cornstarch.
2. **Form the Potato Balls:**
– Take small portions of the potato mixture and shape them into balls, about the size of a golf ball. Place them on a plate or tray.
3. **Fry the Potato Balls:**
– Heat oil in a deep frying pan or pot over medium-high heat. Once the oil is hot, carefully add the potato balls in batches, making sure not to overcrowd the pan.
– Fry the potato balls until they are golden brown and crispy on all sides, about 4-5 minutes. Remove them with a slotted spoon and drain on paper towels.
