– 2-3 medium yellow squash or zucchini, sliced into 1/4-inch rounds
– 1 cup all-purpose flour

– 1/2 teaspoon garlic powder

– 1/2 teaspoon paprika
– 2 large eggs
– 1/4 cup milk
– 1 cup breadcrumbs (panko or regular)
– 1/2 cup grated Parmesan cheese (optional)
– Vegetable oil, for frying
**Instructions:**
1. **Prepare the Squash:**
– Wash and slice the squash into 1/4-inch thick rounds. Pat dry with paper towels to remove excess moisture.
2. **Set Up Breading Stations:**
– In a shallow dish, mix the flour, salt, black pepper, garlic powder, onion powder, and paprika.
– In another shallow dish, beat the eggs and milk together.
– In a third shallow dish, combine the breadcrumbs and grated Parmesan cheese (if using).
3. **Bread the Squash Rounds:**
– Dredge each squash round in the seasoned flour, shaking off any excess.
– Dip the floured squash round into the egg mixture, allowing any excess to drip off.
– Coat the squash round in the breadcrumb mixture, pressing gently to ensure an even coating.

4. **Fry the Squash Rounds:**
– Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat until hot (around 350°F or 175°C).
– Carefully place the breaded squash rounds into the hot oil in batches, making sure not to overcrowd the skillet.
– Fry for about 2-3 minutes on each side, or until golden brown and crispy.
– Use a slotted spoon to remove the fried squash rounds and place them on a plate lined with paper towels to drain any excess oil.
