Creamy Sausage, Potato, and Kale Soup Recipe

 

 

 

Ingredients:

  • 1 lb (450g) Italian sausage or ground beef
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, diced
  • 2-3 cloves garlic, minced
  • 2 carrots, sliced or diced
  • 4 cups (1L) chicken or vegetable broth
  • 1 cup (240ml) heavy cream or half-and-half
  • 2 cups (500ml) water
  • 2 cups kale, chopped (or spinach for a milder flavor)
  • 2 tablespoons olive oil or butter
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: a pinch of red pepper flakes for heat

Instructions:

  1. Cook the Sausage:
    • In a large pot, heat the olive oil or butter over medium heat.
    • Add the sausage (or ground beef) and cook until browned, breaking it up into small pieces as it cooks. If there’s excess fat, drain it off.
  2. Sauté the Vegetables:
    • Add the diced onion to the pot and sauté until translucent, about 5 minutes.
    • Add the garlic and cook for another minute until fragrant.
  3. Add the Potatoes and Carrots:
    • Stir in the diced potatoes and carrots. Cook for
