Creamy Sausage, Potato, and Kale Soup Recipe
Ingredients:

- 1 lb (450g) Italian sausage or ground beef
- 4 medium potatoes, peeled and diced
- 1 medium onion, diced
- 2-3 cloves garlic, minced
- 2 carrots, sliced or diced
- 4 cups (1L) chicken or vegetable broth
- 1 cup (240ml) heavy cream or half-and-half
- 2 cups (500ml) water
- 2 cups kale, chopped (or spinach for a milder flavor)
- 2 tablespoons olive oil or butter
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Optional: a pinch of red pepper flakes for heat
Instructions:
- Cook the Sausage:
- In a large pot, heat the olive oil or butter over medium heat.
- Add the sausage (or ground beef) and cook until browned, breaking it up into small pieces as it cooks. If there’s excess fat, drain it off.
- Sauté the Vegetables:
- Add the diced onion to the pot and sauté until translucent, about 5 minutes.
- Add the garlic and cook for another minute until fragrant.
