Creamy Italian Tortellini Soup
*Ingredients*
7 c chicken broth
4 c fresh baby spinach
1 tablespoon olive oil
28 ounce can + 14 ounce can diced tomatoes
1 tablespoon Italian seasoning
1 pound raw Italian sausage , hot or sweet/mild
½ c Parmesan cheese, grated
¾ c heavy whipping cream (optional)
2 tablespoons minced garlic
10 ounces small frozen cheese tortellini (or fresh)
1 cup chopped onion
Instructions:
Press the “ “Saute Button” on the Instant Pot. Add 1 tablespoon olive oil and heat.
Add the sausage and fry for a few minutes until browned. Leave about 1 tablespoon of oil in the pot and discard the rest.
Add the garlic and onion and sauté for a few minutes until aromatic and soft.Add Italian seasonings to taste.
Add about ½ cup chicken broth, then scrape the bottom of the pot to remove any browned bits. Stir everything until everything is well mixed.
Press the “Cancel” button on the Instant Pot, then add the canned tomatoes, the rest of the chicken broth, and the frozen tortellini. Stir again until everything is well incorporated.Press the pressure cook button and cook on high for about a minute. Allow the pressure to release for 3 minutes.
Press the Saute button again, then add the baby spinach and cook for a few minutes until wilted. Add the Parmesan cheese.
Add ¾ cup heavy cream and mix until well combined.Top each serving with fresh chopped basil, red pepper flakes, and more Parmesan cheese. Enjoy!
