Creamy Garlic Shrimp with Spinach and Cherry Tomatoes

 

 

**Ingredients:**

– 1 lb (450g) large shrimp, peeled and deveined
– 2 tbsp olive oil or butter
– 4 cloves garlic, minced
– 1 cup cherry tomatoes, halved
– 3 cups fresh spinach leaves
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1 tsp Italian seasoning
– 1/2 tsp red pepper flakes (optional, for a bit of heat)
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)

**Instructions:**

1. **Cook the Shrimp:**
– Heat the olive oil or butter in a large skillet over medium heat.
– Add the shrimp to the skillet, season with salt and pepper, and cook for about 2-3 minutes per side, or until the shrimp turn pink and are cooked through.
– Remove the shrimp from the skillet and set aside.

2. **Sauté the Garlic and Tomatoes:**
– In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
– Add the cherry tomatoes and cook until they start to soften, about 2-3 minutes.

3. **Make the Creamy Sauce:**
– Add the fresh spinach to the skillet and cook until wilted.
– Pour in the heavy cream and stir to combine with the tomatoes and spinach.
– Stir in the Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Cook until the sauce begins to thicken slightly.

4. **Combine and Serve:**
– Return the cooked shrimp to the skillet and stir to coat them in the creamy sauce.
– Let everything simmer together for another 2-3 minutes, allowing the flavors to meld.
– Taste and adjust seasoning with more salt and pepper if needed.

– Garnish with freshly chopped parsley before serving.
