Creamy Garlic Chicken with Bacon

Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 6 slices of bacon, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 cup grated Parmesan cheese
- Fresh chopped parsley, for garnish
Instructions:
- Prep the Chicken: Season the chicken breasts with salt, pepper, and paprika.
- Cook the Bacon: In a large skillet, cook the chopped bacon until crisp. Remove the bacon from the skillet and set aside. Drain off excess bacon grease, leaving about 2 tablespoons in the skillet for cooking the chicken.
- Brown the Chicken: In the same skillet, add the olive oil. Once hot, add the chicken breasts and cook on medium-high heat for about 5 minutes on each side, or until golden and cooked through. Remove the chicken from the skillet and set aside.
- Make the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth to deglaze the pan, scraping up any bits stuck to the bottom. Stir in the heavy cream, thyme, and bring to a simmer. Reduce heat and let it simmer until it starts to thicken.
- Combine: Return the chicken to the skillet. Sprinkle with Parmesan cheese and let it melt into the sauce. Add the cooked bacon on top.
- Serve: Check the seasoning and adjust with salt and pepper if necessary. Garnish with fresh parsley before serving.
