Creamy Chicken and Rice Casserole Recipe

 

 

Ingredients:

  • 2 cups cooked and shredded chicken
  • 1 cup uncooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the rice: In a medium saucepan, bring the chicken broth to a boil. Add rice, reduce heat, cover, and simmer until the rice is tender and the liquid is absorbed, about 15-20 minutes.
  3. Sauté onions and garlic: While the rice cooks, heat olive oil in a skillet over medium heat. Add onion and garlic, cooking until the onion is translucent.
  4. Combine ingredients: In a large mixing bowl, combine the cooked rice, cooked chicken, sautéed onion and garlic, heavy cream, and sour cream. Season with salt and pepper to taste.
  5. Assemble the casserole: Transfer the mixture to a greased baking dish. Sprinkle with cheddar and Parmesan cheeses.
  6. Bake: Place in the oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Garnish and serve: Sprinkle chopped parsley over the top before serving.
