Creamy Cheesecake with Avocado, Mozzarella and Tomato

 

Ingredients:

4 slices of sourdough bread
1 ripe avocado, cubed
1 large tomato, cubed
240 ml fresh mozzarella, cubed
2 tablespoons of oil, spicy
Salt and pepper to taste black pepper to taste
Fresh basil leaves (optional)

Preparation:

Heat a pan over medium heat.
Butter one side of each piece of sourdough bread.
Place two slices of bread in a pan, buttered side up.
Place mozzarella cheese, avocado slices and tomato slices on the bread in the pan. Add salt and pepper to taste.
Finish with fresh basil leaves if desired.
Place the remaining bread slices on top and the butter on top.
Bake until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Press gently with a spatula to melt the cheese and ensure the sandwich sticks together.
Remove from heat, let cool for a minute, slice and serve.
