Creamy Cauliflower and Potato Soup

Ingredients:


1 tablespoon olive oil or butter
1 small onion, chopped
2 cloves garlic, minced
1 medium head of cauliflower, chopped into florets
2 medium potatoes, peeled and diced
4 cups vegetable or chicken broth
1 cup milk or cream (for a richer soup)
Salt and black pepper, to taste
1/2 teaspoon dried thyme (optional)
1/4 teaspoon red pepper flakes (optional, for a bit of heat)
Fresh chives or parsley, chopped (for garnish)
Grated cheese (like cheddar or Parmesan, for serving)
Instructions:
1. Sauté the Aromatics:
In a large pot, heat the olive oil or butter over medium heat.
Add the chopped onion and sauté for about 5 minutes until softened.
Stir in the minced garlic and cook for an additional minute until fragrant.

2. Add Vegetables:
Add the chopped cauliflower and diced potatoes to the pot.
Pour in the vegetable or chicken broth, and bring the mixture to a boil.
Reduce the heat to a simmer and cook for about 20 minutes, or until the vegetables are tender.

3. Blend the Soup:
Using an immersion blender, blend the soup until smooth and creamy.
If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender and blend until smooth.

4. Stir in Milk and Season:
Return the blended soup to the pot (if using a countertop blender).
Stir in the milk or cream, and season with salt, black pepper, dried thyme, and red pepper flakes (if using).
Heat the soup over low heat until warmed through, about 5 minutes.

5. Serve:
Ladle the soup into bowls and garnish with fresh chives or parsley.
Serve with grated cheese on top, if desired. Enjoy!

Tips:
Make It Vegan: Substitute milk or cream with coconut milk or a plant-based milk of your choice.
Add Flavor: For added depth, you can include a bay leaf while simmering and remove it before blending.
Storage: Leftover soup can be stored in the refrigerator for up to 3 days. Reheat gently on the stovetop.
