Creamy Broccoli and Potato Soup Recipe
Ingredients:
– 2 tablespoons olive oil or butter
– 1 large onion, chopped
– 2 cloves garlic, minced
– 4 cups vegetable or chicken broth
– 4 large potatoes, peeled and diced
– 2 cups broccoli florets
– 2 large carrots, sliced
– 1 cup heavy cream or milk
– 1 cup shredded cheddar cheese
– 1 teaspoon dried thyme

Instructions:
1. **Sauté Onion and Garlic:**
In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until it becomes translucent. Add the minced garlic and cook for another minute.
2. **Add Broth and Vegetables:**
Pour in the vegetable or chicken broth. Add the diced potatoes and sliced carrots. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the vegetables are tender.
