Cream-filled Puff Pastry Cake Recipe

Ingredients:
For the Puff Pastry:
- 1 package of puff pastry sheets (store-bought or homemade)
- 1 egg, beaten (for egg wash)
- Powdered sugar (for dusting)
For the Cream Filling:
- 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch (optional, for stabilization)
Instructions:
- Prepare the Puff Pastry:
- Preheat your oven to 375°F (190°C).
- On a lightly floured surface, roll out the puff pastry sheets to smooth them out.
- If using multiple sheets, you can layer them together for extra flakiness. Otherwise, cut one sheet to fit a round cake pan or leave it as is for a rectangular cake.
- Transfer the pastry to a baking sheet lined with parchment paper.
- Brush the top of the pastry with the beaten egg to give it a beautiful golden color when baked.
- Use a fork to prick the surface lightly to prevent it from puffing up too much.
- Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and fully puffed. Let it cool completely.
- Prepare the Cream Filling:
- In a large mixing bowl, whip the heavy cream with a hand mixer or stand mixer until it begins to thicken.
- Gradually add the powdered sugar and vanilla extract while continuing to whip.
- If you prefer a firmer filling, add the cornstarch to the cream mixture.
- Continue whipping until the cream forms stiff peaks. Be careful not to overwhip.
- Assemble the Cake:
- Once the puff pastry is completely cool, carefully slice it in half horizontally, if it is thick enough to do so.
- Spread or pipe the whipped cream filling generously on the bottom layer of the pastry.
- Place the top layer of pastry back on top, gently pressing it down.
- If you used a round shape, you can create a swirl pattern with extra cream on top if desired.
- Finish and Serve:
- Lightly dust the top of the cake with powdered sugar.
- Optionally, you can drizzle some honey or caramel sauce on top for extra sweetness and flavor.
- Serve immediately or refrigerate for a few hours to allow the cream to set.
Tips:
- You can add fresh berries or fruit slices to the cream filling for a fruity twist.
- This dessert is best served on the same day it’s made, as the puff pastry can become soggy if left for too long.
