Cranberry Dijon Chicken Roast with Apple Cider Glaze

Ingredients
4 boneless, skinless chicken breasts
1 cup fresh cranberries (or frozen)
1/4 cup Dijon mustard
1/4 cup apple cider vinegar
1/2 cup apple cider
2 tablespoons brown sugar
1 tablespoon olive oil
1 teaspoon thyme
1 teaspoon rosemary
Salt and pepper to taste
Fresh parsley for garnish
How to Make It
Preheat your oven to 375°F (190°C).
In a small bowl, whisk together the Dijon mustard, apple cider vinegar, apple cider, brown sugar, thyme, rosemary, salt, and pepper until well combined.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then sear them in the skillet for about 3-4 minutes on each side until golden brown.
Remove the skillet from the heat and pour the cranberry Dijon glaze over the chicken, making sure to coat them evenly.
Scatter the fresh cranberries around the chicken in the skillet.
Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken is cooked through and the glaze is bubbling.
Remove from the oven and let rest for a few minutes before slicing. Garnish with fresh parsley before serving.
