Ingredients:

  • For the Dough:
    • 3 cups all-purpose flour
    • 1/4 cup sugar
    • 1 packet (2 1/4 teaspoons) instant yeast
    • 1/2 teaspoon salt
    • 1 cup coconut milk, warmed to about 110°F (43°C)
    • 1/4 cup unsalted butter, melted
    • 1 large egg
  • For the Glaze:
    • 1/4 cup coconut milk
    • 2 tablespoons honey

Instructions:

  1. Prepare the Dough:
    • In a large bowl or the bowl of a stand mixer, combine flour, sugar, yeast, and salt.
    • In a separate bowl, mix the warm coconut milk, melted butter, and egg.
    • Add the wet ingredients to the dry ingredients and mix until a soft dough forms.
    • Knead the dough on a lightly floured surface or with the dough hook of your mixer for about 10 minutes, until smooth and elastic.
    • Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
  2. Shape the Bread:
    • After the dough has risen, punch it down and turn it out onto a lightly floured surface.
    • Divide the dough into equal pieces and shape each into a square or rectangle, depending on your preferred final shape.
    • Place the shaped dough pieces into a greased baking dish, spacing them slightly apart as they will expand during the second rise and baking.
  3. Second Rise:
    • Cover the shaped dough loosely with plastic wrap or a clean kitchen towel.
    • Let it rise again for about 30 minutes, until puffy.
  4. Prepare the Glaze and Bake:
    • Preheat your oven to 350°F (175°C).
    • In a small bowl, mix together the coconut milk and honey for the glaze.
    • Brush the risen dough gently with half of the glaze.
    • Bake the bread in the preheated oven for 25 to 30 minutes, or until golden brown on top.
    • Midway through baking, brush the bread with the remaining glaze to ensure a shiny, golden finish.
  5. Cool and Serve:
    • Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
    • Serve the coconut milk bread warm or at room temperature.
