Coconut Milk Bread Recipe
Ingredients:
- For the Dough:
- 3 cups all-purpose flour
- 1/4 cup sugar
- 1 packet (2 1/4 teaspoons) instant yeast
- 1/2 teaspoon salt
- 1 cup coconut milk, warmed to about 110°F (43°C)
- 1/4 cup unsalted butter, melted
- 1 large egg
- For the Glaze:
- 1/4 cup coconut milk
- 2 tablespoons honey
Instructions:
- Prepare the Dough:
- In a large bowl or the bowl of a stand mixer, combine flour, sugar, yeast, and salt.
- In a separate bowl, mix the warm coconut milk, melted butter, and egg.
- Add the wet ingredients to the dry ingredients and mix until a soft dough forms.
- Knead the dough on a lightly floured surface or with the dough hook of your mixer for about 10 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 to 1.5 hours.
- Shape the Bread:
- After the dough has risen, punch it down and turn it out onto a lightly floured surface.
- Divide the dough into equal pieces and shape each into a square or rectangle, depending on your preferred final shape.
- Place the shaped dough pieces into a greased baking dish, spacing them slightly apart as they will expand during the second rise and baking.
- Second Rise:
- Cover the shaped dough loosely with plastic wrap or a clean kitchen towel.
- Let it rise again for about 30 minutes, until puffy.
- Prepare the Glaze and Bake:
- Preheat your oven to 350°F (175°C).
- In a small bowl, mix together the coconut milk and honey for the glaze.
- Brush the risen dough gently with half of the glaze.
- Bake the bread in the preheated oven for 25 to 30 minutes, or until golden brown on top.
- Midway through baking, brush the bread with the remaining glaze to ensure a shiny, golden finish.
- Cool and Serve:
- Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Serve the coconut milk bread warm or at room temperature.
