Ingredients:
400 g (14 oz) firm tofu, pressed and cubed
2 tablespoons coconut oil (or vegetable oil)
1 onion, chopped
3 cloves garlic, minced
1 tablespoon ginger, grated
2 tablespoons red or green curry paste (adjust to taste)
1 can (400 ml) coconut milk
2 cups vegetable broth
2 cups mixed vegetables (such as bell peppers, carrots, and zucchini)
1 cup snap peas or green beans
1 tablespoon soy sauce (or tamari for gluten-free)
1 tablespoon lime juice
Fresh cilantro, chopped, for garnish
Cooked rice or quinoa, for serving
Instructions:
Prepare the Tofu:
Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
Sauté the Aromatics:
In a large pot or skillet, heat the coconut oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
Add the Curry Paste:
Add the curry paste to the pot, stirring well to combine with the aromatics. Cook for about 1 minute to release the flavors.
Add Liquids and Vegetables:
Pour in the coconut milk and vegetable broth, stirring to combine.

Simmer for about 10-15 minutes, or until the vegetables are tender and the flavors meld together.
Finish and Serve:
Stir in the soy sauce and lime juice, adjusting the seasoning as needed.
Serve the coconut curry hot over cooked rice or quinoa, garnished with fresh cilantro.

Vegetable Variations: Feel free to use seasonal vegetables or whatever you have on hand, such as spinach, broccoli, or cauliflower.
