Ingredients

– 1 can (14 oz) sweetened condensed milk
– 1 can (14 oz) coconut milk
– 1 cup heavy cream
– 1/4 cup granulated sugar
– 1/4 cup cornstarch
– 1 teaspoon vanilla extract
– 1 cup shredded sweetened coconut
– 1/4 cup shredded coconut for topping

1. **Prepare the Coconut Pudding:**
– In a medium saucepan, combine the sweetened condensed milk, coconut milk, heavy cream, sugar, and cornstarch.
– Cook over medium heat, whisking constantly, until the mixture thickens and starts to bubble. This should take about 5-7 minutes.

2. **Flavor and Cool:**
– Remove the saucepan from the heat and stir in the vanilla extract and 1 cup of shredded coconut.
– Pour the mixture into a 9×9 inch dish or a similar-sized serving dish.

3. **Chill:**
– Allow the dessert to cool slightly at room temperature, then cover and refrigerate for at least 2 hours, or until fully set and chilled.

4. **Garnish and Serve:**
– Before serving, sprinkle the top with the additional 1/4 cup of shredded coconut.
– Serve cold as a light and refreshing dessert.
