Ingredients:
– 1 cup (125g) all-purpose flour
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1/2 cup (115g) unsalted butter, softened
– 1/2 cup (100g) granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1 cup (90g) shredded sweetened coconut
– 1/4 cup (25g) extra shredded coconut for topping
Instructions:
1. **Preheat Oven:**
– Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. **Mix Dry Ingredients:**
– In a bowl, whisk together the flour, baking powder, and salt. Set aside.
3. **Cream Butter and Sugar:**
– In a large bowl, cream together the softened butter and sugar until light and fluffy using a hand mixer or stand mixer.

4. **Add Wet Ingredients:**
– Beat in the egg and vanilla extract until well combined.
5. **Combine with Dry Ingredients:**
– Gradually add the dry ingredients to the wet mixture, mixing until just combined.
6. **Add Coconut:**
– Fold in the shredded coconut until evenly distributed throughout the dough.
7. **Form Cookies:**
– Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with your fingers or the back of a spoon.

– Sprinkle extra shredded coconut on top of each cookie, pressing lightly to adhere.
