 Classic Vegetable Soup

 

 

Ingredients:

– 2 tablespoons olive oil
– 1 large onion, chopped
– 2 cloves garlic, minced
– 2 large carrots, sliced
– 2 celery stalks, sliced
– 2 medium potatoes, diced
– 1 cup green beans, trimmed and cut into 1-inch pieces
– 1 can (14.5 ounces) diced tomatoes
– 6 cups vegetable broth
– 1 teaspoon dried thyme
– 1 teaspoon dried basil
– Salt and pepper to taste
– Fresh parsley for garnish

 Instructions:

1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic, and cook until softened, about 5 minutes.
3. Add the carrots and celery, and cook for another 5 minutes.
4. Stir in the potatoes, green beans, diced tomatoes, vegetable broth, thyme, and basil.
5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the vegetables are tender.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh parsley.
