Classic Peach Cobbler
Ingredients:
For the Filling:
- 6 fresh peaches, peeled, pitted, and sliced (or 4 cups canned peaches, drained)
- 1/4 cup sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tsp cinnamon (optional)

- 1 cup all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 3/4 cup milk
For the Topping:
- 2 tbsp sugar (for sprinkling)
- Vanilla ice cream (optional for serving)
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a deep pie dish.
- Prepare the Filling:
- In a bowl, toss the peach slices with sugar, lemon juice, vanilla extract, and cinnamon (if using). Let them sit for 5–10 minutes to release some of the juices.
- Make the Batter:
- In another bowl, mix together the flour, sugar, baking powder, and salt.
- Slowly stir in the milk and melted butter until smooth and well combined.
- Assemble the Cobbler:
- Pour the batter into the greased baking dish, spreading it out evenly.
- Spoon the peach mixture (along with its juices) over the batter. The peaches will sink slightly into the batter, which is what you want.
- Sprinkle the 2 tbsp of sugar over the top for extra sweetness and crunch.
- Bake:
- Bake the cobbler for 35–40 minutes, or until the top is golden and the batter is cooked through. The edges should be crispy, and the peaches should be tender.
- Serve:
- Let the cobbler cool slightly before serving. Serve warm with a scoop of vanilla ice cream for an extra treat.
