  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup milk

For the Topping:

  • 2 tbsp sugar (for sprinkling)
  • Vanilla ice cream (optional for serving)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or a deep pie dish.
  2. Prepare the Filling:
    • In a bowl, toss the peach slices with sugar, lemon juice, vanilla extract, and cinnamon (if using). Let them sit for 5–10 minutes to release some of the juices.
  3. Make the Batter:
    • In another bowl, mix together the flour, sugar, baking powder, and salt.
    • Slowly stir in the milk and melted butter until smooth and well combined.
  4. Assemble the Cobbler:
    • Pour the batter into the greased baking dish, spreading it out evenly.
    • Spoon the peach mixture (along with its juices) over the batter. The peaches will sink slightly into the batter, which is what you want.
    • Sprinkle the 2 tbsp of sugar over the top for extra sweetness and crunch.
  5. Bake:
    • Bake the cobbler for 35–40 minutes, or until the top is golden and the batter is cooked through. The edges should be crispy, and the peaches should be tender.
  6. Serve:
    • Let the cobbler cool slightly before serving. Serve warm with a scoop of vanilla ice cream for an extra treat.
