Classic Lemon Tart Recipe
Ingredients:
For the crust:
- 1 1/4 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk

- 2 teaspoons lemon zest
- 1/2 cup lemon juice (freshly squeezed)
- 3 large eggs
- 1/2 cup heavy cream
Instructions:
- Prepare the crust:
- Preheat your oven to 350°F (175°C).
- In a food processor, blend the flour, powdered sugar, and salt. Add the cubed butter and pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and pulse until the dough just comes together.
- Press the dough into a 9-inch tart pan with a removable bottom. Use a measuring cup to press down and ensure it’s even.
- Freeze the crust for 30 minutes, then bake for 25 minutes or until golden. Let it cool.
- Make the filling:
- In a mixing bowl, whisk together the granulated sugar and lemon zest. Add the lemon juice, eggs, and cream, and whisk until smooth.
- Strain the mixture into the cooled crust to remove any lumps or larger zest pieces.
- Bake the tart:
- Reduce the oven temperature to 325°F (160°C).
- Bake the tart for 20-25 minutes, or until the filling is set but still slightly wobbly in the center.
- Cool and serve:
- Let the tart cool completely before removing from the tart pan.
- Serve chilled or at room temperature. Optionally, dust with powdered sugar or garnish with whipped cream before serving.
