Ingredients:

For the crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk

  • 1 cup granulated sugar
  • 2 teaspoons lemon zest
  • 1/2 cup lemon juice (freshly squeezed)
  • 3 large eggs
  • 1/2 cup heavy cream

Instructions:

  1. Prepare the crust:
    • Preheat your oven to 350°F (175°C).
    • In a food processor, blend the flour, powdered sugar, and salt. Add the cubed butter and pulse until the mixture resembles coarse crumbs.
    • Add the egg yolk and pulse until the dough just comes together.
    • Press the dough into a 9-inch tart pan with a removable bottom. Use a measuring cup to press down and ensure it’s even.
    • Freeze the crust for 30 minutes, then bake for 25 minutes or until golden. Let it cool.
  2. Make the filling:
    • In a mixing bowl, whisk together the granulated sugar and lemon zest. Add the lemon juice, eggs, and cream, and whisk until smooth.
    • Strain the mixture into the cooled crust to remove any lumps or larger zest pieces.
  3. Bake the tart:
    • Reduce the oven temperature to 325°F (160°C).
    • Bake the tart for 20-25 minutes, or until the filling is set but still slightly wobbly in the center.
  4. Cool and serve:
    • Let the tart cool completely before removing from the tart pan.
    • Serve chilled or at room temperature. Optionally, dust with powdered sugar or garnish with whipped cream before serving.
