Ingredients:

  • For the Fried Chicken:
    • 4 chicken legs (thigh and drumstick)
    • 2 cups buttermilk
    • 2 teaspoons paprika
    • 1 teaspoon garlic powder
    • Salt and black pepper to taste
    • 2 cups all-purpose flour
    • Oil for frying
  • For the Mashed Potatoes:
    • 4 large potatoes, peeled and cubed
    • 1/4 cup butter
    • 1/2 cup milk
    • Salt and pepper to taste
  • For the Gravy:
    • 2 tablespoons chicken fat or butter
    • 2 tablespoons all-purpose flour
    • 2 cups chicken broth
    • Salt and pepper to taste
  • For the Green Beans:
    • 1 pound fresh green beans, trimmed
    • 2 tablespoons olive oil
    • Salt and pepper to taste

  1. Marinate the Chicken:
    • In a large bowl, mix buttermilk with paprika, garlic powder, salt, and pepper. Add the chicken pieces and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.
  2. Prepare the Mashed Potatoes:
    • Boil the potatoes in salted water until tender, about 15 minutes. Drain and return to the pot.
    • Add butter and milk to the potatoes and mash until smooth. Season with salt and pepper. Keep warm.
  3. Cook the Green Beans:
    • In a skillet, heat olive oil over medium heat. Add green beans and sauté until they are crisp-tender, about 5-7 minutes. Season with salt and pepper. Set aside.
  4. Fry the Chicken:
    • Heat oil in a deep fryer or large skillet to 350°F (175°C).
    • Remove chicken from buttermilk and dredge each piece in flour until well coated.
    • Fry the chicken in the hot oil until golden brown and cooked through, about 15 minutes. Drain on paper towels.
  5. Make the Gravy:
    • In a saucepan, melt the chicken fat or butter. Whisk in flour and cook for about 1 minute until bubbly.
    • Slowly add chicken broth, whisking continuously to prevent lumps. Cook until the gravy thickens. Season with salt and pepper.
  6. Assemble the Dish:
    • Serve the fried chicken with a side of mashed potatoes and green beans.
    • Pour gravy over the chicken and mashed potatoes.
    • Garnish with parsley if desired.
