Chocolate Mochi Recipe
Ingredients:
- For the Mochi:
- 1 cup glutinous rice flour (mochiko)
- 1/4 cup sugar
- 2 tablespoons cocoa powder
- 3/4 cup water
- 1/4 cup cornstarch (for dusting)
- For the Chocolate Glaze:
- 1/2 cup chocolate chips
- 2 tablespoons heavy cream
Instructions:
- Prepare the Mochi:
- In a microwave-safe bowl, whisk together the glutinous rice flour, sugar, and cocoa powder.
- Gradually add the water while stirring to create a smooth mixture.
- Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, then microwave again for another 1 to 2 minutes until the dough becomes sticky and slightly translucent.
- Let the dough cool slightly until it’s warm to the touch.
- Shape the Mochi:
- Dust your work surface and hands with cornstarch to prevent sticking.
- Place the mochi dough on the dusted surface and sprinkle more cornstarch on top.
- Flatten the dough into a disk and cut into small pieces or use a small round cookie cutter to form neat circles.
- Prepare the Chocolate Glaze:
- Combine the chocolate chips and heavy cream in a small microwave-safe bowl.
- Microwave in 20-second intervals, stirring in between, until the chocolate is fully melted and the mixture is smooth.
- Glaze the Mochi:
- Dip each mochi piece into the chocolate glaze, ensuring it’s evenly coated.
- Place the glazed mochi on a parchment-lined tray.
- Set and Serve:
- Allow the mochi to set at room temperature until the chocolate glaze hardens, or chill in the refrigerator for faster setting.
- Serve the chocolate mochi as a sweet snack or dessert.
