Ingredients:

  • 1 lb pork belly, cut into small cubes
  • 2 large potatoes, peeled and cubed
  • 4 cups chicken or vegetable broth
  • 1 tablespoon soy sauce
  • 2 tablespoons Chinese black vinegar
  • 1 teaspoon chili paste or adjusted to taste
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 green onion, chopped
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Salt to taste
  • Vegetable oil for frying
  • Optional: sesame oil and white pepper for finishing

Instructions:

  1. Prepare the Pork:
    • Heat vegetable oil in a pan over medium-high heat.
    • Add the pork belly cubes and fry until they are crispy and golden. Remove and set aside on a paper towel to drain excess oil.
  2. Cook the Potatoes:
    • In a separate large pot, bring the chicken or vegetable broth to a boil.
    • Add the cubed potatoes and simmer until they are just tender, about 10-15 minutes.
  3. Flavor the Soup:
    • Add the soy sauce, Chinese black vinegar, and chili paste to the pot. Stir well to combine.
    • Add the minced garlic and ginger to the soup, and simmer for another 5 minutes to let the flavors meld.
  4. Thicken the Soup:
    • Slowly stir in the cornstarch mixture to the soup while stirring continuously. Keep stirring until the soup thickens slightly, about 2 minutes.
  5. Final Touches:
    • Return the crispy pork belly to the soup and stir. Let it heat through for about 1-2 minutes.
    • Check for seasoning and add salt if needed. For an authentic touch, add a few drops of sesame oil and a sprinkle of white pepper.
  6. Serve:
    • Ladle the soup into bowls and garnish with chopped green onions.
    • Serve hot and enjoy the rich flavors.
