Ingredients:

– **For the beef filling:**
– 1 pound ground beef
– 1 small onion, diced
– 1 green bell pepper, diced
– 1 red bell pepper, diced
– 2 cloves garlic, minced
– 1 tablespoon taco seasoning
– Salt and pepper to taste

– **For the cheese sauce:**
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– 1 cup milk
– 1 1/2 cups shredded cheddar cheese
– Salt and pepper to taste

– **For the burritos:**
– 4 large flour tortillas
– 1 cup shredded lettuce
– 1 tomato, diced
– 1/2 cup sour cream (optional)
– Salsa (optional)

Instructions:

 

1. **Prepare the beef filling:**
– In a large skillet over medium-high heat, cook the ground beef until browned. Drain any excess fat.
– Add the diced onion, green bell pepper, red bell pepper, and minced garlic to the skillet. Cook until the vegetables are tender.
– Stir in the taco seasoning, salt, and pepper. Cook for an additional 2-3 minutes. Remove from heat and set aside.

2. **Make the cheese sauce:**
– In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes, stirring constantly.
– Gradually whisk in the milk, continuing to stir until the mixture thickens.
– Add the shredded cheddar cheese, stirring until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.

3. **Assemble the burritos:**
– Warm the flour tortillas in a dry skillet or in the microwave for a few seconds until pliable.
– Spoon an even amount of the beef filling onto the center of each tortilla.
– Add shredded lettuce, diced tomato, and any other desired toppings.
– Drizzle the cheese sauce over the fillings.
– Roll up each tortilla, folding in the sides and rolling from the bottom to enclose the filling.

– Serve the burritos warm with optional sides of sour cream and salsa.
